After undergoing a 72-hour dry anaerobic fermentation in sealed tanks, lychee is added to enhance the fermentation process. The coffee is then dried on African beds together with the lychee at temperatures below 35°C, until the beans reach their ideal moisture content.

The Castillo variety, developed by Colombia’s National Coffee Federation (FNC), is known for its high productivity and resistance to coffee leaf rust, outperforming the traditional Caturra variety in resilience and yield.

Producer Jairo Arcila is a third-generation coffee grower from the Quindío region of Colombia. He is married to Luz Elena Salazar, and together with their two sons, Carlos and Felipe Arcila, they founded Cofinet. Jairo worked for over 40 years as a mill manager at Colombia’s second-largest coffee exporter before retiring in 2019.

Jairo purchased his first coffee farm, Finca La Esmeralda, in 1987, where he began cultivating Caturra. Through successful harvests, he was able to acquire five additional farms: Villarazo, Mazatlan, Santa Monica, Maracay, and Buenos Aires. During harvest seasons, he provides employment opportunities for locals, contributing to the regional economy.

With deep insights and expertise in coffee picking, sorting, and processing—passed down from his sons—Jairo continues to produce exceptional coffees. His dedication results in outstanding flavor profiles that highlight the unique characteristics of his region.
